Popara: The traditional Balkan dish transitioning from home staple to restaurant specialty

Popara, a traditional dish made from stale bread, water or milk, and fats, is seeing a resurgence as both a nostalgic home meal and a restaurant specialty in Serbia. Historically regarded as a meal of necessity or 'poverty food' used to prevent food waste, it was prepared quickly using basic household ingredients like garlic, butter, cheese, or kajmak.

In modern Belgrade restaurants, the dish has been elevated into a gastronomic experience. While it was once prepared at almost no cost in households, restaurant portions—such as those found in New Belgrade—are priced between 400 and 500 dinars. These commercial versions often include enriched ingredients like somun, sour cream, feta cheese, and crushed paprika to enhance the flavor profile.
