Popayán hosts Gastronomic Congress to celebrate culinary heritage

The city of Popayán, Colombia, continues to serve as a central hub for culinary tradition through its Gastronomic Congress. Established in 2003 by Guillermo Alberto González Mosquera with support from former Minister of Culture María Consuelo Araújo, the event was designed to provide a dedicated space for studying and valuing Colombian gastronomy.

The congress brings together traditional cooks from Popayán and the Cauca region, international chefs, researchers, and students. The program includes workshops, conferences, and tastings aimed at preserving family recipes and oral traditions. This cultural significance was further recognized in 2005 when UNESCO designated Popayán as a Creative City of Gastronomy.
