Pork preservation guidelines and storage durations
According to food safety guidelines from the United States Department of Agriculture (USDA), pork preservation times vary significantly based on the type of meat and storage method.
In the refrigerator (maintained at 4°C or lower), raw whole cuts of pork can be kept for 3 to 5 days, while ground pork should be used within 1 to 2 days. Cooked pork remains safe for approximately 3 to 4 days. Ground meat has a shorter shelf life because its increased surface area allows for wider microbial distribution.
In the freezer (maintained at -18°C or lower), meat remains microbiologically safe for long periods, though quality may decline over time. Recommended durations for optimal quality include 4 to 12 months for whole cuts, 3 to 4 months for ground pork, and 2 to 3 months for cooked pork. Perishable foods should not be left at room temperature for more than 2 hours, or 1 hour if the ambient temperature exceeds 32°C.
