Portuguese culinary traditions highlighted through regional restaurants
Portugal's regional culinary traditions are being preserved and evolved through long-standing family establishments and new gastronomic concepts.
In Lousã, the restaurant Casa Velha has operated since 1986. Founded by Reinaldo and Maria Emília Costa, the business is now managed by their daughters, Márcia and Maria João Costa. The establishment is renowned for its Chanfana, a traditional dish made of goat meat and red wine. The restaurant has successfully transitioned to a second generation of leadership while maintaining its connection to the Serra da Lousã and local recipes.
In Lisbon, the restaurant Origem has opened in Calçada da Ajuda, serving as a contemporary expansion of the Alentejo-inspired concept O Frade. Led by executive chef Bruno Oliveira and founded by cousins Carlos Afonso and Sérgio Frade, Origem focuses on a detailed sensory experience. This includes the use of handcrafted ceramics from Coimbra to complement a menu that blends regional elements with contemporary culinary creations.
