Potato cultivation and cooking: Harvesting tips and crispy roasting techniques

Potato cultivation and preparation tips offer guidance for both gardeners and home cooks. For gardeners, the timing of the harvest depends on the variety. Early varieties like Adéla or Riviera can be harvested starting in June, but they are only suitable for short-term storage of one to three months. Semi-early varieties like Bellarosa last four to six months, while late varieties such as Agria or Antonia are best for long-term storage and should be harvested between late August and mid-October. A key indicator of maturity is when the foliage yellows and withers, and the skin becomes firm enough that it cannot be easily rubbed off with a finger.

In the kitchen, achieving perfectly crispy roasted potatoes can be accomplished using a simple pantry staple: semolina. Sprinkling pre-boiled potatoes with semolina before roasting helps absorb excess moisture from the surface. This allows the heat to create a crunchy, textured crust rather than a soft or gummy texture. Unlike flour, semolina provides a granular structure that creates microscopic bumps that break easily when eaten, while also offering a slight nutty flavor.
