Potato industry focuses on fresh market trends and consumer versatility

The University of Idaho Extension has announced its inaugural Fresh Pack Potato Symposium, scheduled for November 17-18 in Twin Falls, Idaho. Supported by a U.S. Department of Agriculture grant, the event aims to address the specific needs of the fresh potato market, which accounts for approximately 23% of the $4.8 billion U.S. potato market. Unlike many industry meetings that focus on potatoes for frozen processing, this symposium will target professionals in the fresh table stock sector.

Complementing this industry focus, a new survey commissioned by the Idaho Potato Commission reveals shifting consumer priorities in the grocery sector. The study of 2,000 U.S. adults found that shoppers are increasingly prioritizing food waste minimization, shelf life, and nutritional value alongside price. Notably, 40% of respondents identified potatoes as their most versatile pantry staple, and 48% reported a more positive view of potatoes due to their affordability and versatility.
