Potato pancake recipes suggest specific ingredients for better texture

Various culinary methods have been shared to improve the texture and flavor of traditional potato pancakes, focusing on achieving a crispy exterior and preventing them from becoming soggy or oily.

One technique suggests adding two tablespoons of corn flour to the potato mixture. This ingredient helps bind excess moisture and promotes a golden, chip-like crunch without making the pancakes heavy.

Another approach, proposed by restaurateur Ewa Wachowicz, involves adding grated yellow cheese and a tablespoon of natural yogurt to the batter. The cheese acts as a binding agent that melts during frying to create a crispy crust, while the yogurt adds creaminess. To ensure success, it is recommended to thoroughly drain the grated potatoes to remove excess liquid before mixing the ingredients.
