Potato recipes feature puff pastry parcels and salt-crust roasting
Various culinary methods for preparing potatoes are highlighted, ranging from savory pastries to salt-crusted roasting.
One method involves creating puff pastry parcels filled with a mixture of boiled potatoes, mozzarella, spring onions, and herbs such as oregano, thyme, and parsley. These parcels are brushed with egg and baked at 200 °C for approximately 25–30 minutes.
Another technique focuses on roasting whole potatoes in a salt crust without the use of water or oil. After washing and piercing the potatoes with a fork, they are coated in salt and baked at 180 °C for about 60 minutes. This process results in a crispy skin while maintaining a soft interior, which can be served with butter, ham, or herb curd cheese.
