Potato recipes for cold soup and baked dishes

Various potato-based recipes are presented, including a cold potato soup and baked potatoes with bacon and cheese.

The cold potato soup is a refreshing alternative to tarator, featuring boiled potatoes, yogurt, cucumber, boiled eggs, spring onions, garlic, and dill. It is prepared by mixing a base of yogurt, water, olive oil, and lemon juice with the chopped ingredients and is best served chilled after resting in the refrigerator for 1–2 hours.

For a warm dish, baked potatoes can be prepared with bacon, onions, cream, and melted yellow cheese. The process involves frying bacon and onions, layering sliced potatoes with the bacon-onion mixture and cheese in a dish, and pouring cream over it. The dish is baked covered in foil at 180 degrees Celsius for 30 minutes, then uncovered for an additional 15 minutes to create a golden crust.
