Potato safety and preparation guidelines
Guidelines for handling potatoes highlight both culinary techniques and food safety precautions regarding sprouting and toxicity.
For cooking, air fryers can produce crispy potato chips by circulating hot air around the food, creating a crunchy exterior without heavy oil. For best results, using starchy potatoes with low moisture content is recommended to ensure a crisp texture rather than a soft one.
Regarding safety, sprouted potatoes may still be edible if the flesh remains firm and lacks green discoloration. In such cases, the sprouts and surrounding areas should be deeply removed and the potato peeled generously. However, if the tuber feels soft, wrinkled, or shows green skin, it should be discarded. This discoloration indicates high concentrations of glycoalkaloids, such as solanine and chaconine, which the plant produces as a natural defense mechanism. While these compounds exist in safe levels in all potatoes, they can reach toxic levels as the vegetable begins to grow new sprouts.
