Périgord mushroom markets see abundant harvest
The mushroom market in Saint Saud-Lacoussière, Dordogne, has reported an abundant harvest of Bordeaux porcini mushrooms. Organized by the Association Cèpes du Périgord, the market saw 550 kg of mushrooms sold in a single afternoon following a productive period of humidity and sunlight.
To maintain quality, the association enforces strict regulations: sellers must sell within the market premises, products must be sold fresh within 24 hours of harvest, and only mushrooms harvested from the seller's own property are permitted. Mushrooms are categorized by maturity and condition to ensure standards for buyers.
In light of seasonal changes, mycological experts advise caution regarding frost. While some species like velvet foot collybia or oyster mushrooms can withstand cold, experts warn against consuming any mushroom that has been frozen, thawed, or waterlogged, as frost does not destroy toxins.
