Processed Food Consumption Linked to Distinct Blood Biomarkers, Live‑Microbe Intake Cuts Mortality
A large European cohort of more than 15,000 participants showed that high consumption of ultra‑processed foods leaves a characteristic “fat signature” in the blood, including 22 metabolites and eight fatty acids. The pattern featured lower levels of health‑promoting omega‑3 DHA and higher levels of industrial trans‑fats and saturated fats, biomarkers previously associated with obesity, type‑2 diabetes and cardiovascular disease.
In a separate U.S.‑based study of 1,300 stroke survivors, researchers found that a diet rich in live microorganisms—found in foods such as yogurt, kefir, soy products and sauerkraut—was associated with up to a 39% reduction in all‑cause mortality over six years. No significant link was observed for cardiovascular mortality. The findings suggest that dietary interventions increasing live‑microbe intake could improve life expectancy for vulnerable patients.
