Processed Meat Linked to Higher Dementia Risk in US Seniors
A new study published in the American Journal of Public Health examined older Americans and found that higher consumption of ultraprocessed foods (UPFs) was associated with a greater risk of both cognitive impairment without dementia (CIND) and full dementia. The research, based on data from the Health and Retirement Study, categorized participants by their UPF intake using the NOVA classification system and tracked memory and cognitive function biennially.
Among the various UPF subcategories, processed meat showed the strongest connection to cognitive decline. The authors suggest that high‑heat processing creates harmful by‑products, and the high levels of saturated fat, sodium, and nitrates in processed meats may increase brain inflammation and disrupt gut‑brain communication. Participants who consumed more minimally processed foods exhibited lower cognitive risk, highlighting the importance of food quality and processing level.
The findings persisted after adjusting for demographics, physical activity, smoking, and total caloric intake, adding to a broader body of evidence that 78.5% of reviewed studies link higher UPF consumption to poorer cognitive outcomes. The authors recommend substituting processed deli meats with whole protein sources and increasing intake of minimally processed foods to help protect brain health in older adults.
