Puebla cuisine arrives in Mexico City via Chapulín festival

In Mexico City, the Chapulín restaurant, located within the Hotel Presidente InterContinental in Polanco, is hosting a festival featuring authentic chiles en nogada from iconic Puebla-based establishments. From mid-August through late September, the festival will showcase culinary offerings from Augurio, Mural de los Poblanos, and Cocina de Los Ángeles.

To maintain traditional integrity, certain ingredients and techniques are prepared in Puebla and transported to Mexico City for final plating. The event aims to provide the specific flavors and identity of the Puebla region without requiring travel.

Additionally, seasonal culinary trends include gourmet variations of traditional dishes, such as chilaquiles served with nogada sauce, combining classic breakfast elements with the festive ingredients of the September season.
