Puglia's frisella transitions from traditional staple to gourmet social media trend

The traditional Puglian dish frisella has seen a surge in popularity among celebrities on social media, transitioning from an inexpensive staple to an expensive gourmet item.

Immunologist and clinical nutrition professor Mauro Minelli describes the dish as a biscuit-like circle made from durum wheat, barley, or whole wheat. He notes that the preparation method—baking, cutting, and double-biscuiting—was historically designed for long-term preservation.

Nutritionally, Minelli identifies frisella as a core component of the Mediterranean diet. It contains approximately 1 to 2 grams of fat per 100 grams and provides between 300 and 330 kcal per 100 grams. The classic preparation involves soaking the bread in cold water and seasoning it with tomato, salt, oregano, and extra virgin olive oil.
