Quiche Lorraine: Purists argue cheese has no place in the traditional recipe
Culinary purists and the Syndicat national de Défense et de Promotion de l’Authentique Quiche Lorraine (SNDPAQL) maintain that a traditional Quiche Lorraine must be made without cheese. According to these specialists, adding cheese such as Gruyère or Emmental denatures the dish, effectively turning it into a cheese tart rather than an authentic Quiche Lorraine. They suggest that adding onions would instead classify the dish as a Quiche Alsacienne.
An authentic recipe consists of shortcrust pastry, smoked bacon bits (lardons), eggs, heavy cream, salt, pepper, and occasionally nutmeg. The absence of cheese allows the smoky flavor of the meat and the aroma of the spices to remain prominent. The texture is achieved through a balance of eggs and cream, resulting in a filling that is firm yet remains soft and moist in the center.
While many industrial producers and supermarket brands include cheese in their versions, traditionalists argue that the cheese masks the intended flavors and alters the texture, making the dish heavier.
