Quinoa culinary and traditional uses in the Americas

Quinoa is gaining significant popularity across the Americas, particularly in urban areas, due to its nutritional value and culinary versatility. The ancestral grain is being utilized by renowned chefs while traditional uses are being revitalized among rural farming communities.

In modern gastronomy, quinoa is used in soups, stews, and desserts, and can be processed into flour for breads, cookies, and noodles. It is also consumed in puffed form with yogurt and ice cream. Traditional applications include the creation of llipt’a, an alkaline substance made from burnt quinoa stalks used alongside coca leaves.

Additionally, tender quinoa leaves serve culinary and medicinal purposes. In the Altiplano, dried leaves enrich soups, and Aymara traditions involve using them topically to reduce skin spots. For infant nutrition, boiled leaves are mixed with potato mashes as a low-oxalate alternative to spinach. The grain is also essential for traditional beverages like chicha blanca.
