R Baker to open ultra-compact model store in Shinagawa

R Baker, a bakery and cafe brand under Eat & And Holdings, will open a new ultra-compact model store at the Shinagawa Innovation Park in Tokyo on September 4, 2026. Measuring approximately 20 square meters (6 tsubo), the location is designed to meet the diverse needs of office workers in an R&D-focused environment.

The store utilizes a specialized model that combines freshly baked goods made from proprietary frozen dough with bread that has had its flavor locked in through post-baking freezing technology. The interior design incorporates sustainable elements, such as upcycled wood from demolished traditional houses.

This location serves as a strategic hub for the brand's long-term growth, functioning as both a showroom for future franchise expansion and a research and development center for testing new menu items. With this opening, R Baker's total number of stores will reach 46.
