Rẽ chili brings income to Muong ethnic farmers

The Rẽ chili, known to the Muong people as ‘Khòi chili’, is a traditional agricultural product originating from the slopes of Rẽ Vơng Mountain. Historically grown in small household gardens, this unique chili is characterized by its glossy green color, slender shape, and a rapid yet non-harsh spiciness accompanied by a distinct aroma.

Traditionally, the Muong people preserve these chilies by soaking them in salt and lemon, a process that requires careful timing to maintain crispness and prevent spoilage. This preserved chili serves as a staple accompaniment to meat, fish, and seasonal vegetables in local cuisine.

Through modern development, the Rẽ chili has transitioned from a local kitchen staple to a commercial product with established raw material areas, traceability codes, and OCOP (One Commune, One Product) certification. This evolution is helping to increase income for local farmers in areas such as Ba Rẽ village.
