Regional culinary innovations in Argentina and Spain

In Argentina, the Cooperativa de Trabajo Santiago en Producción Ltda. has expanded its Monte Vivo brand product line. Based in La Banda, Santiago del Estero, the cooperative uses native fruits like algarroba, mistol, and chañar to create value-added foods. Their offerings include coffee substitutes, whole grain flour, energy bars, and a new alfajor made with algarroba flour. The production relies on a network of local families who collect the fruit from the regional monte.

In Spain, Granada entrepreneurs are launching ‘Dulce de la Alhambra’, a new pastry inspired by the historical figures of King Boabdil and his mother, Aixa. Produced by the traditional pastry company Maritoñi, the product aims to connect Granada’s historical memory with contemporary gastronomy. The launch includes an audiovisual presentation featuring actors portraying the last Muslim king of Granada and his mother.
