Regional Japanese noodle specialties highlight diverse flavors

Various specialty noodle products and establishments are highlighting unique regional flavors in Japan. In Kameari, Tokyo, Menba Tadokoro Shoten has opened a miso ramen specialty shop. The menu features diverse miso varieties, including Hokkaido, Kyushu, and Edomae styles, paired with unique toppings such as miso-marinated chashu and fried potatoes.

Additionally, Moritaya Sohonten, a long-standing Sano ramen establishment from Tochigi Prefecture, has released a supervised Hiyashi Chuka (cold ramen) bagged noodle kit. This product features a unique texture created by using three different widths of flat noodles and a sweet-and-sour soy sauce base infused with apple vinegar and yuzu aroma.
