Regional Polish culinary traditions feature diverse potato-based dishes

Various regional Polish culinary traditions highlight diverse ways to prepare potato-based dishes beyond standard pancakes.

In the Bieszczady and Lemko regions, fuczki are a traditional staple made from grated potatoes and sauerkraut. The sauerkraut provides a crunchy, aromatic, and slightly acidic flavor profile.

In the Greater Poland region, particularly around Poznań, bambrzok is a traditional baked potato specialty. Similar to a potato cake, it is made from raw grated potatoes and can be served in both savory and sweet versions.

In Lelów, the traditional dish ciulim lelowski consists of a mixture of grated potatoes, onions, garlic, and eggs, layered with pork ribs and slow-baked, often overnight, to develop a deep flavor.
