Research explores impact of kefir yeasts and xanthan gum on gut health

New scientific research is shedding light on the complex relationship between dietary components and gut health.

A study from the University of Florence, published in PNAS, has mapped the genome of yeasts found in traditional kefir from the Yaghnob Valley in Tajikistan. Led by Duccio Cavalieri, the research identifies these microorganisms as a highly evolved ecosystem capable of supporting intestinal well-being and combating pathogens through natural fermentation processes.

In contrast, research from the Federal University of São Paulo (Unifesp) in Brazil has raised concerns regarding xanthan gum (E415), a common industrial thickening agent. The study observed that continuous consumption in rat models can alter the intestinal microbiota, affect colon barrier indicators, and promote inflammatory states. This adds to growing scientific scrutiny regarding the impact of food additives on chronic intestinal inflammation.
