Retail strategies and consumer behavior in supermarkets

Retailers utilize specific psychological and organizational strategies to influence consumer spending habits. Supermarket layouts are often designed to guide customers through the entire store, placing essential items like bread and milk far from the entrance to increase exposure to other products.

Factors such as product positioning, cart size, promotional signage, music, and scents are used to encourage unplanned purchases. Beyond physical layout, retailers use discounts and loyalty programs to drive sales. However, business consultant Nikola Stefanović notes that promotions can sometimes merely shift the timing of a purchase rather than creating new demand. He suggests that true promotional success is measured by incremental growth—sales that would not have occurred without the discount—rather than just a temporary spike in volume.
