Revo Foods launches apricot kernel-based plant cheese in Germany
Austrian food-tech startup Revo Foods is launching Cottage Protein+, a fermented plant-based alternative to cottage cheese, in German EDEKA and REWE supermarkets.
The product is made from just four ingredients: apricot kernels, water, salt, and vegan fermentation cultures. Unlike many plant-based alternatives that rely on coconut or palm fats and thickeners, Revo Foods utilizes a fermentation process to achieve a grainy texture and characteristic flavor. The apricot kernels, which make up 40% of the product, serve as a sustainable ingredient often produced as a byproduct of other food processing.
Cottage Protein+ contains 11.5g of protein per 100g (17g per 150g container), matching the protein levels of traditional dairy products. The fat profile is derived entirely from natural apricot kernel oil, which is rich in unsaturated fatty acids. CEO David Petuzzi stated that the company uses fermentation as a tool to transform natural raw materials into nutritious and tasty foods, emphasizing a focus on healthy proteins.
