Rice cooking: Science and techniques for texture

Scientific research and culinary techniques offer insights into the preparation and texture of rice. A 2019 study examined whether washing rice multiple times prevents stickiness. By comparing glutinous, medium-grain, and jasmine rice, researchers found that the number of rinses did not significantly alter the final stickiness or hardness. Instead, texture is primarily determined by the rice variety and its amylopectin content.

For rice that has become overcooked or too soft, several methods can help manage the texture. Spreading hot rice on a wide surface to release steam or lightly sautéing it in a pan can help evaporate excess moisture. If the rice is too soft to serve as a side dish, it can be repurposed for recipes requiring a compact consistency, such as rice croquettes, tortillas, or fillings. Cooling overcooked rice in the refrigerator before stir-frying can also help firm up the grains.
