Rice flour-based food businesses expand in Japan

Various businesses in Japan are focusing on rice flour as a versatile, gluten-free alternative to wheat for baked goods and specialty cuisine.

In Hiroshima, Kobo Comett opened in September 2026. The shop specializes in baked goods made from 100% Hiroshima-produced rice flour, including its signature soft rice baumkuchen. The shop uses traditional methods without baking powder or emulsifiers to highlight the natural flavors of the ingredients.

In Fukuoka, several establishments are gaining popularity for their rice flour offerings. Kometora Tenjin specializes in gluten-free bagels made from self-cultivated rice flour using a unique steaming-and-baking method. Muni Coffee & Bake offers gluten-free and 100% plant-based baked goods, such as rice flour scones. Additionally, Tempura Men Kobo Ten provides specialty tempura using certified non-gluten rice flour to achieve a crispy texture.
