Rice nutritional profiles: Pigmented varieties and dietary uses

Recent nutritional studies and dietary analyses highlight the diverse properties of rice and its derivatives. Research conducted by Hokkaido University on 56 Japanese rice varieties revealed that pigmented varieties, such as black and green rice, possess unique lipid compositions compared to white rice. These varieties contain specific lipid groups, including FAHMFA and LNAPE, which have not been previously identified in rice. Additionally, these pigmented grains showed a slower starch breakdown during simulated digestion.

In terms of dietary applications, rice cakes are noted for being low-calorie, gluten-free, and practical alternatives to ultra-processed snacks. While a standard rice cake contains approximately 35 calories and 7 grams of carbohydrates, nutritionists suggest they lack significant protein and fiber on their own. To create a balanced snack, experts recommend pairing them with protein-rich and fiber-dense foods such as legumes, cheese, hummus, avocado, or nuts.
