Romania seasonal autumn activities: pickling and mushroom foraging

Autumn in Romania brings seasonal traditions related to food preservation and foraging. September is identified as an ideal month for pickling various vegetables such as cucumbers, green tomatoes, peppers, and cauliflower. The success of the fermentation process depends heavily on temperature; for instance, cucumbers ferment in approximately three to four weeks at 21-24 degrees Celsius, while cooler temperatures of 12-18 degrees Celsius can extend the process to five or six weeks. Cabbage pickling is typically reserved for later in the season, around October or November.

Additionally, October marks a peak period for mushroom foraging in Romanian forests. Lower temperatures and increased humidity favor the growth of edible species including porcini (hribi), chanterelles (ghebe), and various autumn mushrooms. However, experts warn that foragers must exercise extreme caution, as toxic species can easily be mistaken for edible ones, and it is recommended that foragers be accompanied by experienced individuals.
