Salento white wines and seafood pairing guide
White wines from the Salento region are gaining recognition for their ability to complement local Mediterranean cuisine, particularly seafood. While the area was traditionally known for robust red wines, local white varieties are now surprising experts with citrusy profiles, saline sensations, and well-integrated acidity.
Key local grape varieties include Verdeca, known for its tense and mineral character; Minutolo, which offers Mediterranean aromas; Bianco d’Alessano; and Malvasia Bianca. These wines are often produced under DOC or IGP designations, providing stylistic variety for different culinary needs.
When pairing wine with seafood, the primary goal is balance. For raw seafood such as oysters, carpaccio, or tartare, highly mineral white wines and dry sparkling wines are recommended to respect the delicate flavors. For cooked dishes, wines should possess sufficient acidity to cleanse the palate and structure to support various seasonings like garlic, herbs, or tomato, without being overly alcoholic or heavy.
