Santa Tresa launches first organic Etna Bianco DOC

Santa Tresa, the Sicilian winery led by Stefano and Marina Girelli, has launched its first Etna Bianco DOC. The wine is produced using 100% organic Carricante grapes grown on the southeastern slopes of Mount Etna.

The vineyard spans approximately four hectares at an altitude of 400 to 500 meters, located about 7 kilometers from the Ionian Sea. The vines are cultivated using traditional methods, grown low to the ground without trellises and tended entirely by hand. The first vintage, 2025, has an initial production run of 8,000 bottles.

Enologist Mattia Giacomelli oversees the entire process from the vineyard to the cellar, where the wine is processed using steel. The resulting wine is described as having citrus notes, such as pink grapefruit and lemon zest, along with iodized, mineral, and flinty characteristics.
