Santorini winemakers adapt to drought and rising heat

Winemakers on the Greek island of Santorini are struggling to adapt to rising temperatures and drought. The production of the island’s famous Assyrtiko grape fell significantly, dropping from 2,500 tonnes in 2022 to 500 tonnes last year due to low rainfall and extreme summer heat between 2023 and 2025.

To combat these challenges, winemaker Yiannis Boutaris of Domaine Sigalas is participating in a pilot project with scientists and local authorities. The initiative explores using treated wastewater from homes and hotels for irrigation, which may prove more sustainable and energy-efficient than using desalination plants.

In addition to agricultural adaptations, the region's wine culture continues to emphasize its unique volcanic terroir through culinary experiences. Establishments like Rizes Gastro Taverna are hosting events that pair indigenous grape varieties with contemporary Greek cuisine to highlight the island's distinct landscapes and winemaking traditions.
