Sasanelli: Traditional Puglian sweets preserved through generations
Sasanelli are traditional sweets from the Puglia region of Italy, deeply rooted in local peasant culture and seasonal festivities such as All Saints Day. These treats are characterized by a crunchy exterior and a soft, flavorful center.
While various regional versions exist, notable preparations include those from Gravina and Giovinazzo. A key ingredient in many recipes is fig vincotto, which replaced grape vincotto to better complement the flavor profile. Other common components include coarsely ground toasted almonds, dark chocolate, spices, and extra virgin olive oil, such as the Oliarola variety from Giovinazzo.
Pastry chef Nicola Giotti, a member of the Ambassadors of Italian Excellence, is noted as a custodian of these traditional recipes. He has introduced variations, such as using quince jam to evoke historical homemade preserves and seasonal flavors.
