Schleswig-Holstein Gourmet Festival debuts on Föhr

The Schleswig-Holstein Gourmet Festival recently held its premiere at the Namine Witt in Nieblum on the island of Föhr. On October 16 and 17, star chef Tom Elstermeyer from the restaurant iko in Osnabrück presented a unique menu designed to blend his culinary style with local coastal influences.

The menu featured dishes inspired by the regional landscape, including titles such as ‘Priele und Rinnen’, ‘Tide’, ‘Das Marschland’, and ‘Rauch in den Salzwiesen’. Specific creations included lightly pickled mackerel with potato and yeast, razor clams with Föhr chicken eggs and marshland herbs, and beechwood-grilled salt marsh lamb with swede and pickled quince. The meal concluded with ‘Gotings gelbe Perlen’, a combination of lettuce, yogurt, sea buckthorn, and white chocolate.

Hosts Laura and Ole Sondermann noted that the event provided a new gastronomic experience for the island, emphasizing Elstermeyer’s focus on high-quality products and conscious cooking.
