The Schwarz Gruppe, a major retail conglomerate with 2024 revenues of approximately 175 billion euros, operates two distinct market models through its brands Lidl and Kaufland. While Lidl functions as a high-speed discounter with a standardized, limited assortment, Kaufland targets larger weekly grocery shops. Regarding product freshness, Lidl utilizes an industrial process for its bakery items. While many products are prepared in large-scale industrial bakeries and delivered as dough to stores, they undergo a final baking process on-site using automated or manual systems. This process is managed via IT-supported baking schedules to meet local demand and ensure products are baked fresh in the store.
