Science of Rice Hacks: Vinegar Effects and Raw Rice in Salt Shakers
Adding vinegar to rice during cooking changes the grain texture because acetic acid interferes with starch gelatinisation. Laboratory tests published in *Food Research International* showed that the acid alters water absorption by amylopectin, leading to increased stickiness and reduced hardness under the studied conditions, contrary to popular claims that it always makes rice fluffier.
Placing a few raw rice grains in a salt shaker helps keep the salt free‑flowing in humid environments. The dry rice absorbs moisture through its hygroscopic structure, breaking up small clumps that form when salt crystals become damp. Five to ten grains are sufficient for a tabletop shaker, and the grains should be replaced periodically to maintain effectiveness.
