Scientists explain miracle fruit sweetness and melon‑water myth

The West African fruit Synsepalum dulcificum, known as miracle fruit, contains the protein miraculin. After consumption, miraculin temporarily binds to sweet‑taste receptors, causing acidic foods such as lemons, kiwi or vinegar to be perceived as sweet for 30 minutes to two hours. The fruit is used in “flavor‑tripping” experiments and is being studied for potential benefits for patients with altered taste perception, though experts stress that medical claims remain unproven.

A separate popular belief claims that drinking water after eating melon turns the fruit’s flesh into cork and causes digestive distress. Scientific analysis shows that the “corky” appearance of some cantaloupe melons is due to natural rind fissures formed during growth, not water absorption. Medical professional Dr Ana Torre notes there is no scientific evidence linking water consumption with any harmful effect on melon digestion; the occasional discomfort is individual and not a systematic risk.
