Seasonal food preservation methods for herbs and fruit

Seasonal food preservation techniques offer ways to maintain the flavor of herbs and fruits through the winter months.

For herbs, basil is sensitive to low temperatures and should be moved indoors to a warm, bright location or frozen in oil. Parsley is frost-resistant and can remain in the garden, though leaves can also be frozen for later use. Rosemary and thyme are hardy; rosemary may require protection from frost or indoor potting, while thyme can be dried in bundles in a cool, shaded area. Mint can be trimmed close to the ground to allow for regrowth in the spring.

Fruit preservation can be achieved through making peach compote. By using ripe yet firm peaches, a light syrup infused with lemon and vanilla, and following a pasteurization process with sterilized jars, the taste of summer can be preserved for use in desserts and salads during colder months.
