Shanghai doctor finds diabetic patient maintained stable blood sugar using sweet corn
A 60-year-old woman in Shanghai, China, diagnosed with type 2 diabetes, maintained stable blood sugar levels over six months by consuming sweet corn as a replacement for white rice.
Despite fears that the natural sweetness of corn would spike her glucose, the patient, Ms. Zhang, reported eating half a boiled sweet corn every morning while reducing her intake of white rice. Upon follow-up, Dr. Gao Qingge of Shanghai People's Hospital No. 6 noted that her fasting blood glucose and HbA1c levels remained within safe ranges.
Dr. Gao explained that while sweet corn is not a medicinal cure for lowering blood sugar, it can be consumed safely if used correctly as a replacement for rapid-digesting starches rather than being added on top of existing high-carb meals.
