Sicilian Granita and Gelo di Cannella Highlight Traditional Summer Desserts

Granita Siciliana, a summer staple rooted in Arab‑influenced Sicily, is distinguished by its creamy, lightly crystallised texture achieved through continuous mantecazione during freezing. Classic flavors vary by region, with almond‑based granita common in Messina and fruitier lemon or black mulberry versions preferred in Catania. Traditional preparation involves mixing a simple syrup of water, sugar and chosen flavoring, chilling the mixture in a shallow metal tray and periodically scraping it to break ice crystals, resulting in a light, velvety dessert often served with brioche for breakfast.

Gelo di cannella is another cold Sicilian sweet, made by infusing cinnamon sticks in water overnight, boiling the infusion, adding corn‑starch and sugar, and cooking to a thick custard before chilling in a mold for a night. The set dessert can be served in slices or cubes, optionally garnished with nuts and edible flowers, and is often paired with a sweet, lightly sparkling Malvasia wine. Both recipes celebrate Sicily’s heritage of cooling treats for hot summer days.
