Sicilian Pasta alla Norma recipe highlighted for quick 20‑minute preparation

Pasta alla Norma, a classic dish from Catania in Sicily, combines fried eggplant, tomato sauce, fresh basil and grated ricotta salata. Both articles detail a method that can be completed in about 20 minutes by cooking the pasta while simultaneously frying the eggplant and simmering the sauce.
