Sicily maintains a rich variety of traditional culinary specialties, including the Torta Fedora and the Pizzolo.

The Torta Fedora is a dessert originating from Catania. Historically created to utilize leftover ricotta cream from the production of Cassata, the cake consists of sponge cake filled with chocolate-chip ricotta and topped with toasted almonds and candied cherries. While it was a staple in Sicilian pastry shops during the 1960s, it has since become a niche product found primarily in historic Catania bakeries.

In Sortino, within the province of Siracusa, the Pizzolo is a traditional baked dish. It is a round, leavened dough disc approximately 20 centimeters in diameter, which is sliced open and stuffed with various ingredients before being returned to the oven to melt the cheese. The name is derived from ‘pizzòlu’, referring to the flat stones historically used to cook the bread. Originally a staple for farmers, it often features ingredients like roasted peppers, eggplant, and wild thyme from the Iblei Mountains.
