Slovenian culinary traditions explore fruit fermentation and cryoconcentration

Traditional and modern culinary techniques in Slovenia highlight the evolution of fruit processing. Historically, apple-based fermented drinks have been a staple in Slovenian rural areas, known by various local names such as 'jabolčnik', 'mošt', or 'tolkec'. These drinks, which typically contain between 4 and 8 percent alcohol, were produced by fermenting surplus apple harvests in wooden barrels.

In contemporary gastronomy, the technique of cryoconcentration is being used to intensify flavors. This process involves freezing a liquid, such as fruit or vegetable juice, and removing the ice crystals. This leaves behind a concentrated liquid rich in sugars, acids, and aromas. The boutique restaurant Miza za štiri, led by chefs Jure Brložnik and Maja Miška Brložnik, utilizes this method to create intense non-alcoholic accompaniments and to enhance dishes, such as using concentrated beet juice for a beetroot tartare.
