SMOKE DOOR Haruyoshi Saryo to open wood-fired restaurant in Fukuoka

SMOKE DOOR Haruyoshi Saryo, a new wood-fired restaurant operated by BOND CREATION, is scheduled to open in Haruyoshi, Chuo-ku, Fukuoka, on September 20, 2026. The establishment focuses on utilizing various fire techniques, including embers (okibi), direct fire, distant fire, and smoking, to maximize the potential of ingredients.

Executive Chef Tyler Burgess, who has experience in Michelin three-star restaurants, and Head Chef Mikito Kashiwamura lead the culinary team. The restaurant emphasizes a deep connection with local producers in the Kyushu region and employs traditional preservation methods, such as fermenting and drying ingredients over time.

The dining experience integrates local craftsmanship, featuring tableware selected from approximately 30 pottery kilns in Koishiwara and Takatori. Additionally, custom-made Hakata-ori textiles from Sanui Orimono will be used for menu ties. The restaurant will offer course meals starting at 13,500 yen and includes both alcohol and non-alcoholic pairing options.
