Sobacha: The roasted buckwheat infusion popular in Japan
Sobacha, a popular beverage in Japan, Korea, and China, is an infusion made from roasted buckwheat grains. Despite its name, which literally translates to "buckwheat tea," it is not a traditional tea made from tea leaves but rather from the seeds of a pseudocereal.
Because the grains are roasted, the infusion develops a distinctive nutty, caramel-like aroma due to the formation of aromatic compounds such as pyrazines. A key characteristic of sobacha is that it is naturally caffeine-free, making it a suitable alternative to coffee or traditional teas for evening consumption.
Scientific research indicates that the infusion provides polyphenols, including rutin and quercetin. While the beverage contains these bioactive substances, it is noted that its consumption is not equivalent to medicinal treatment.
