Soda Club opens vegan Italian restaurant in Denver

Soda Club, a plant-based Italian restaurant, has soft-opened in Denver at the Ramble Hotel. The establishment is scheduled for an official opening on September 1.

Originally debuting in New York City’s East Village in 2021, the restaurant previously earned a Michelin Bib Gourmand award for its fresh, vegan pasta. The Denver location features a menu focused on unconventional pasta shapes like gigli and casarecce, paired with unique sauces such as borlotti ragu and cashew pepper butter.

The restaurant was founded by restaurateur Ravi DeRossi and wine director Drew Brady. The culinary direction is led by executive chef Amira Gharib, whose cooking incorporates North African influences on Sicilian cuisine.
