Southern Illinois University scientists develop protein biscuit from recycled plastic
Scientists at Southern Illinois University have developed an experimental method to produce food ingredients, including a protein-rich biscuit, using PET plastic and agricultural waste.
The process utilizes oxidative hydrothermal dissolution to break down PET plastic and plant residues, such as corn stalks and leaves, into molecules that microorganisms can metabolize. Genetically engineered yeast strains then act as biological factories, converting these compounds into proteins, vitamins, fats, and flavoring molecules.
To create the final product, researchers added fiber, starch, and sweetener to the mixture before using a 3D printer to shape the biscuits. While team members found the biscuits palatable during development, the product is currently in an experimental stage and has not been authorized for commercial consumption. Researchers are awaiting health authority approval to conduct broader taste trials.
