Space food innovation targets Mars missions and Earth sustainability
Researchers are developing novel food production technologies to support long-duration space missions, such as travel to Mars, through initiatives like the Deep Space Food Challenge. These innovations aim to create nutritious food using minimal water, energy, and waste within the strict constraints of spacecraft.
One approach involves using mycelium—the root-like network of fungi—to produce edible protein indoors and year-round. Canadian entrepreneurs are exploring these systems to create efficient protein production that could also benefit Earth-based agriculture.
Another breakthrough involves upcycling plastic waste into food. Researchers at Southern Illinois University have developed ‘µBites,’ protein-rich cookies made from polyethylene terephthalate (PET) plastic. The process uses oxidative hydrothermal dissolution to break down plastic and biomass into chemical constituents for yeast microbes. These genetically programmed microbes then produce essential nutrients, including proteins, fats, and vitamins, which are 3D-printed into edible forms.
