Spaghetti carbonara recipe shared by Polish radio stations

Various Polish radio stations have shared a classic recipe for spaghetti carbonara. The preparation involves frying 100g of pancetta or raw bacon in olive oil until the fat renders and the meat browns.

The recipe calls for 350g of dried spaghetti cooked al dente, which is then combined with the meat. A mixture of four large egg yolks, 40g of Parmigiano Reggiano or Grana Padano cheese, and freshly ground pepper is added to the warm pan. To ensure a smooth, creamy sauce and prevent the eggs from scrambling, the pan must be removed from the heat before incorporating the egg and cheese mixture. Pasta water may be used to adjust the consistency.
