Spain's gourmet tasting venues boost artisan food sales

Specialised tasting spaces across Spain are becoming key points where consumers meet small‑scale producers and evaluate high‑quality foods before buying. The model, exemplified by a tasting shop in Tenerife, offers guided sensory assessments of local cheeses, cured meats and extra‑virgin olive oil, helping shoppers understand provenance, traceability and traditional production methods. According to the Ministry of Agriculture, Fisheries and Food, household food expenditure reached €123.7 billion in the latest year, with a clear shift toward proximity stores and premium artisan products. The European market for gourmet foods is valued at over $208 billion.

In the same culinary landscape, the Murcian dish zarangollo – a simple scramble of zucchini, onion, egg and olive oil – has risen from a farmer’s survival food to a recognised DOP emblem of regional gastronomy. Its origins lie in the need to use excess garden produce, and today it is celebrated as a cultural staple of Murcia.

Both developments illustrate a broader Spanish trend of valuing traditional, locally sourced foods and turning them into marketable gourmet experiences.
